Garlic Sweet Potato Mash


2 lbs. (4 medium) sweet potatoes, peeled & cubed
1 tbsp. butter
3 cloves garlic, crushed
1/2 cup 1% milk
2 tbsp. light sour cream
salt and fresh cracked ground pepper, to taste


1. In a large pot boil sweet potatoes in salted water until tender, drain in a colander.
2. Meanwhile, melt butter and sauté garlic until lightly golden. Return potatoes to the pan, add milk and sour cream; mash until smooth and creamy. Adjust salt and pepper to taste.

Thanksgiving Hash


1 tablespoon olive oil
1 tablespoon butter
2-3 cups of leftover stuffing
Small chopped potatoes
1/3 cup grated cheddar
3-4 eggs
Fresh parsley for topping
Any additional breakfast ingredients you wish (such as bacon/onions, if it’s not in your stuffing or apples to caramelize or even corn!)


1. In a large skillet (I used a cast iron), heat olive oil over medium heat and add butter. Set potatoes in the pan, and then fill in the holes with stuffing.
2. Cook for 3-4 minutes or until golden brown and crispy, then gently flip the potatoes and the stuffing, and cook for 3-4 minutes more. While the potatoes and stuffing are cooking, heat another skillet and cook eggs as desired. Add eggs on top of stuffing, garnish with fresh parsley and serve.

Slow Cooker Stuffing


12 cups dried bread cubes
8 ounces ground sausage (I used turkey)
4 tbsp. butter, melted
1 1/2 cups green apples, chopped
1 1/2 cups chopped onion
1 1/2 cups chopped celery
2 tsp finely chopped fresh sage
Salt & pepper to taste
1/2 cup chicken broth


1. Brown the sausage, drain and place in the bottom of a slow cooker. Stir in the bread crumbs. Pour in melted butter, toss together with sausage and breadcrumbs.
2. Place chopped apples, onion, celery, sage, salt and pepper over sausage and breadcrumbs, pour in chicken broth and toss everything.
3. Cover and cook on high for 2-3 hours or until the bread is browned on top and vegetables are tender. Before serving you can stir in 1/4 cup extra broth if desired for extra moisture.
